There are a number of cruise lines which serve those routes.  For some passages, passengers can join or leave the ship in various points in the Caribbean.  Other cruise lines serve South America. 
Here are some examples:

Carnival Cruises to and from St. Maarten, NA

MSC Cruises to and from Rio de Janeiro

Silversea Cruises to and from Barbados

Costa Cruise Lines to and from Pointe-a-Pitre, Guadeloupe
