Whichever route you take from Colorado to California, I-80 being the quickest for such a short trip, the longest part of the drive is through very unexciting desert in western Utah and Nevada.  Instead, why not get a car to see some Rockies then fly to SFO, get another car and see what you want to see there.  It would save time and also a probably hefty drop off charge on a one-way rental.  Or, with just a week see either Colorado or N. California which I think is the better idea.

JYPhoto's advice is spot on. The drive across western Utah and Nevada is truly long and boring. The time you would waste on that drive could be spent enjoying better scenery. Once you reach San Francisco, you will not need the rental car - another reason to shorten your drive. A third option would be to drive between Denver and Salt Lake City, then fly from Salt Lake City to San Francisco, saving at least 600 miles of driving and giving you another day of sightseeing. The disadvantage is that you would have to forfeit Lake Tahoe, but you would have more time in the Rockies.
