It opened as a restaurant in 1929, and its traditional Castilian recipes haven't been altered since. In the cooler months, if you arrive early you can lounge in front of a 4.5m (15-ft.) open fireplace. Oil lamps hang from the ceiling, pigskins are filled with local wine, and rope-covered chairs and high-backed carved settees capture the spirit of the past. Run by the Spanish parador system, the restaurant offers a tasty (and huge) three-course set-price lunch or dinner, featuring such regional specialties as roast suckling lamb, huevos comigos (three eggs fried with mushrooms), and trout Navarre style.
