After years establishing a reputation at Palmilla, and winning the Taste of Belize competition twice, chef Amy Knox has set off on her own and set up shop at this down-home open-air joint. The best seats are those on the outdoor, covered wooden deck, although if those are taken, there are a few tables in the indoor sand-floored dining room. The menu is fairly broad and almost endlessly creative. Start things off with the Fire and Ice Ceviche, sushi-grade chunks of raw tuna marinated in a coconut milk broth spiced with fresh chiles. For a main course I like the bacon-wrapped shrimp grilled with a rum glaze, or the Conchinita Pibil, a traditional Mayan pork dish slow cooked in banana leaves. There are often nightly specials, and the desserts are delectable.
