It's hard to keep up with the comings and goings at the prime Amstelveld canalside dining site just off of Prinsengracht, in a reconverted white 17th-century church, the Amstelkerk. There are many -- count me among them -- who still miss the superb restaurant Kort that was there until 2001. We were partly persuaded by the adventurous (if over-pricey), South Seas-influenced eatery Moko that the proprietors brought in as a replacement. Now Moko has departed too, vanished like a too-brief Pacific sunset. Janvier is a worthy successor, with an adventurous chef (Patrick Kelder) who takes his classical French training and goes out on a modern limb with it, while not bulking up the tab. On warm summer evenings, try to get a table outdoors on the wide-open square beside the Prinsengracht canal.
