Perhaps the slogan on the T-shirts the waitstaff wears sets the mood for this popular downtown Asheville restaurant: PEACE, LOVE AND NOODLES. Voted the number-one Asian restaurant in western North Carolina and set in the oldest building in downtown Asheville, Doc Chey's blends Chinese, Japanese, Thai, Vietnamese, and vegetarian influences to create freshly prepared noodle bowls, rice bowls, and stir-fries. Everything is prepared fresh to order, including all of the sauces. We started our meal with Thai shrimp rolls -- shrimp, garlic, ginger, and scallions in a crispy spring-roll wrapper. You could also select the Chinese lo mein, a traditional stir-fry of cabbage, carrots, onions, and egg noodles. There are also vegetarian and gluten-free menus for those with special dietary needs. Your fellow restaurant patrons will be a representative blend of urban hippies, outdoor-loving granola-crunchers, retired wealthy couples, students, and the conservative church folk who stop by after Sunday services.
