This new and welcome addition to the Banff dining scene brings together bold flavors and sophisticated preparations. While "fuze" suggestions fusion cuisine, in fact, most preparations are updates on French cooking, though there are a number of tempting dishes that reflect Indian and Indonesian influences. Start your meal with Masala prawns with mango in a pappadum basket, or a fricassee of escargot and oyster mushrooms. Butter-poached lobster comes with pesto risotto and tomato marmalade, and Alberta beef tenderloin is served with foie gras, oxtails, and truffled Madeira sauce. The dining room is chic and modern; a lighter menu is available in the lounge.
