In the cozy Archers Mountain Inn , Jackalope's is nestled on the side of Beech Mountain. Even if you're not a guest at the inn, you'll want to dine here -- the cuisine is among the finest in the area. After dinner in winter, guests relax in front of fireplaces; in summer they sit on rockers on the porch. The personal service in the dining room makes you feel pampered. The menu changes from time to time, but you might begin with a sweet Vidalia onion stuffed with sautéed mushrooms, roasted garlic, and Gorgonzola cheese; or else Tuscan shrimp bruschetta. The main courses are always tantalizing, especially the delectable sautéed North Carolina trout nut-rusted with raspberries, or the tiger shrimp flavored with bacon and tomatoes and tossed in an Alfredo sauce with ziti. Homemade desserts are featured nightly.
