Set on the eastern edge of downtown Hamilton, on the ground floor of the Underwater Exploration Institute, this is a stylish and occasionally sought-after enclave of fine Mediterranean dining with a Provençal accent. Inside, you'll find two wide-open and airy-looking dining rooms, one positioned just a step or two above the other, a big-windowed view of the sea, a theatrical-looking bar near the entrance, and an expensive-looking mahogany and cherrywood trim. Menu items are the kind of thing that food and dining magazines like to feature. Food varies with the season and the availability of ingredients but might include cumin-rubbed New Zealand lamb rack, lemon and spinach fettuccine, or pan-sautéed Dover sole with pine nuts. Dessert might include a warm, partially melted chocolate pudding ("fondant au chocolat").
