This wonderful trattoria is one of the few restaurants still doing classic Bolognese cuisine. Hosts Franco and Ezio Bolini insist that all the produce be fresh. The menu's signature dish is tortellina Montegrappa, a pasta favorite served in cream-and-meat sauce. The restaurant is also known for its fresh white truffles and porcini mushrooms. A good example is the graminia, a very fine white spaghetti presented with mushrooms, cream, and pepper. A heavenly salad is made with truffles, mushrooms, parmigiano, and artichokes. Note: Graminia is also served with cream and sausage.
