Not all chefs in Bologna specialize in the classic recipes of yesterday. Marco Fadiga is the most acclaimed chef in the city, and he's known for inventive dishes with unusual flavor combinations. In the historic center, Fadiga operates a casually chic bistro decorated with Tintin pictures and old champagne crates, along with a scattering of graffiti. Look for his daily specials posted on a chalkboard menu. We are dazzled by his appetizers -- perhaps prawns in a vinaigrette or mango, dried tomatoes, or fresh basil, or else an artichoke and squid salad with a nutty vinaigrette. Savor such mains as fricassee of guinea fowl with plums, or else braised veal with radishes, chestnuts, and artichokes.
