Photographs of Sophia Loren, Marcello Mastroianni, and legions of other film and music celebrities line the walls of these high-ceilinged, welcoming rooms, but everyone in Bologna knows that the real star is Anna Maria, who has been making what many consider to be the best pasta in town for 30 years. Tortellini in brodo, parcels of pasta filled with minced pork and floating in chicken broth, and taglietelle with a hearty Bolognese sauce are her signature dishes, but the meat and vegetable lasagnas are memorable, too. Anna Maria will probably find her way to your table at some point during your meal to make sure you’ve eaten every bite, but that won’t be an issue.
