Located in an antique, high-ceilinged building, this delightful bistro is owned by Lauretta, who hails from Aspen, which is why the somewhat incongruous, artsy establishment looks as if it were airlifted from Colorado and dropped here on Boquete's main street. This is where you go when you're hungry for delicious and hearty gringo-style fare in a relaxed ambience that encourages you to linger long after your meal. Lauretta uses the freshest produce and ingredients, drawing on her location in the agricultural breadbasket of Panama. Expect well-prepared American dishes and bar appetizers such as barbecue wings, artichoke dip, and quesadillas; plus huge salads and burgers, and main courses such as filet mignon and grilled fish. I especially like their sandwiches, such as pastrami and Swiss, tuna melt, and BLT -- they are all so hefty you can feel gravity working against you as you try to lift one.
