Named for its perch on Flagstaff Mountain, this restaurant attracts patrons from across the state and nation with excellent cuisine and service, and the spectacular nighttime view of the lights of Boulder spread out 1,000 feet below. The Monette family has owned and operated this restaurant, a local institution, since 1951 and kept ahead of the curve by sticking with tradition in an elegant, candlelit dining room with glass walls that maximize the view. The prices aren't for the budget-minded, but those seeking a romantic setting and superlative food can't miss with the Flagstaff House.
The menu, which changes daily, offers an excellent selection of fresh fish, flown in from the source, and Rocky Mountain game, all prepared with a creative flair. Typical appetizers include pancetta-wrapped rabbit loin or pheasant breast, calamari, black trumpet mushrooms, and caviar. Entrees, many of which are seasonal, might include Colorado rack of lamb, Maine lobster, veal cheeks, and mahimahi. The restaurant also has dessert soufflés, a world-renowned wine cellar (at, 20,000 bottles, perhaps the best in Colorado), and an impressive selection of after-dinner drinks.
