Named for its perch on Flagstaff Mountain, this restaurant attracts patrons from across the state and nation with excellent cuisine and service, and the spectacular nighttime view of the lights of Boulder spread out 1,000 feet below. A local institution since 1951, this family-owned and -operated restaurant has an elegant, candlelit dining room with glass walls that maximize the view. The prices aren't for the budget-minded, but those seeking a romantic setting and superlative food can't miss with the Flagstaff House.
The menu, which changes daily, offers an excellent selection of fresh fish, flown in from the source, and Rocky Mountain game, all prepared with a creative flair. Typical appetizers include pancetta-wrapped rabbit loin or pheasant breast, oysters, morel mushrooms, and caviar. Entrees, many of which are seasonal, might include Colorado buffalo, ahi tuna, Canadian halibut, and soft-shell crabs. The restaurant also boasts dessert soufflés, a world-renowned wine cellar (at, 20,000 bottles, undoubtedly the best in Colorado), and an impressive selection of after-dinner drinks.
