Arguably the best restaurant in Brighton, this basement eatery presents a harmoniously balanced choice of contemporary British dining with French twists. Food is presented with skill and assurance by a well-trained staff in intimate surroundings. Soothing neutral tones predominate in this softly lit, tranquil atmosphere. Starters are startling but tasty, as evoked by the pan-fried lamb sweetbreads and kidneys with duck fried croutons. For a main, dig into such delights as saddle of venison with garlic potato cakes or rabbit wrapped in pancetta and prunes with a carrot purée.
