The quality and originality of the cuisine and excellence of service make this a top choice for fine-dining in Cancún. The Provençal -- but definitely not provincial -- Aioli offers exquisite French and Mediterranean gourmet specialties in a warm and cozy country French setting. Though it serves perhaps the best breakfast buffet in Cancún (for $24/£12), most diners from outside the hotel come here in the evening, when low lighting and superb service promise a romantic experience. Delectable starters include foie gras and risotto with wild mushrooms; among the best main courses are pan-seared jumbo shrimp in lobster sauce, roasted lamb with a tarragon crust, and breast of duck. Desserts are decadent, especially the signature "Fifth Element," rich with chocolate.
