This long-enduring favorite is reason enough to visit Le Suquet, Cannes's old town. The casual atmosphere is complemented by the food, based on available local ingredients. Zucchini flowers stuffed with crab, and breast of duck pan-fried with herbs and spices are always beautifully prepared. Try, if featured, the salad of wild greens (mâche) with truffles -- sublime. The grilled sea bass is perfectly fresh and aromatically seasoned with herbs. Depending on what looked good at the market that day, the chef might be inspired to, say, whip up a rabbit salad with tarragon jus. The setting is intimate, offering casual dining out on the terrace or in air-conditioned comfort.
