Frommer's Review
Acclaimed chef Didier Faugeras is the creative force behind the inspired cuisine here. The high-ceilinged century-old dining room is filled with antiques, and a brick fireplace contributes to the warm atmosphere. The specialty is cassoulet au confit de canard (the famous stew made with duck cooked in its own fat). It has been celebrated here since the early 1960s. A smooth dessert is flambéed crepes Languedoc. In summer you can dine on a patio or in the air-conditioned restaurant. Faugeras and his wife, Isabelle, own the worthy Hôtel Montségur, across the street.
