Château St-Martin Review

One of Languedoc's most successful chefs operates out of this 16th-century château at Montredon, 4km (2 1/2 miles) northeast of Carcassonne. Ringed by a wooded park, the restaurant serves the superb cuisine of co-owners Jean-Claude and Jacqueline Rodriguez. Dine inside or on the terrace. Recommended dishes are fish (according to the daily catch) with fondue of baby vegetables, sea bass with scallop mousseline, sole in tarragon, and confit de canard carcassonnaise (duck meat cooked in its own fat and kept in earthenware pots). Two other specialties are cassoulet languedocienne (made with pork, mutton, and goose or duck) and boullinade nouvelloise (made with an assortment of seafood that includes scallops, sole, and turbot). On the premises are 15 simple, but comfortable, hotel rooms; doubles rent for 80€ to 100€. The hotel is closed November 15 to March 11. Call tel. 04-68-47-44-41 for information on rooms.
