Originally a palace for whatever bishop happened to be in power at the time, this has been the most desirable hotel in town since 1909. It's within the walls of the city, adjoining the cathedral. The Orient-Express Hotel group acquired the hotel in the '90s and fluffed it up to the tune of $3 million. You enter via a long Gothic corridor-gallery leading to the lounge. Many rooms open onto the ramparts and a garden, and feature antiques or reproductions. A few accommodations contain wooden headboards and four-poster beds. The ideal unit is no. 308, which opens onto the most panoramic view of the city. Modern equipment has been discreetly installed throughout, including bathrooms of generous size with tub/shower combinations. The hotel is renowned for its restaurant, La Barbacane.
