Carcassonne's premier address for both food and lodging is this moss-covered 19th-century manor house located about 2.5km (1 1/2 miles) west of the Cité. It was built around 1880 as a cube-shape building, with about a half-dozen stone-sided annexes (site of many of the bedrooms) on the ruins of a medieval monastery. Each bedroom has a photo-magazine aura, with lots of flowered fabrics, a range of decorative styles, and, in many cases, massive and sometimes sculpted ceiling beams. The tiled bathrooms are first-rate. Bernard and Anne-Marie Rigaudis are the experienced owners, assisted by their grown children Marie-Hélène and Pierre. Part of the allure of this Relais & Châteaux member is in the well-crafted and well-conceived meals served beside the pool on flowering terraces. Fixed-price menus, priced from 40€ to 64€ ($52-$83), change several times each season but always demonstrate a sophisticated twist, making local recipes more glamorous and interesting. Sweeping panoramas over the surrounding countryside are found at the hotel's golf course.
