Chefs Rick Tramonto and Gale Gand have made Tru a top dining destination, thanks to its sophisticated-but-not-snobbish cuisine and atmosphere. The menu shines with appetizers such as grilled diver sea scallops with red pepper essence, chorizo, and avocado dumplings; and entrees such as Colorado lamb rib-eye with white turnips, grapefruit, and bergamot. If your wallet and stomach permit, go for the nine-course Chef Tramonto's Market Collection ($145), featuring selections inspired by what was available at that day's markets. For a conspicuous splurge, order the visually sensational caviar staircase (caviars and fixin's climbing a glass spiral staircase), which goes for $250. Gand is one of the city's best pastry chefs, and her desserts perfectly echo Tramonto's savory menus. Sate your sweet tooth with her pineapple rum soup or sticky toffee pudding. (If you're not up for the full Tru experience but want a taste of Gand's talent, a three-course dessert tasting menu is available in the restaurant's lounge for $35 per person.) Service is generally polished but not pompous. The expansive wine list is a treat for oenophiles, with 1,200 selections.
