This is the most comprehensive cluster of restaurants in downtown Cologne, with three distinctly different and well-recommended dining options within the same building. The most formal and expensive of the three is the Börsen Restaurant-Maître, an upscale and very prestigious venue that focuses on Continental and often intricate preparations of duck, venison, foie gras, and fish, all prepared with impeccable style. Expect a clientele of haute-bourgeoise business clients, especially at lunchtime, and lots of emphasis on formality and protocol. Frankly, we prefer -- both because of its solid value and lack of pretensions -- the Börsen-Stube, a middle-bracket tavern-style restaurant with a solid grip on flavor, generous portions, and a reassuring sense of gutbürgerlichkeit. Its three-course Tagesmenu (fixed-price menu), priced at 52€ ($68), is an especially sought-after bargain. Least expensive, a venue like that of a better-than-average beer hall, is the Börsen-Schänke, where wursts, schnitzels, salads, and an especially popular sauerbraten keep cost-conscious diners happy, albeit in a slightly rough-and-ready style.
