Try the Blue-B-Q Bass on fresh thyme Vidalia onion hash; the Lobster Pontchartrain, two lobster tails dusted, baked, and finished with shrimp, lump crabmeat, and mushrooms; or the Michigan mixed grill, with cranberry-stuffed quail, game sausage, and venison medallions.
