Housed in one of "The Most Romantic Hotels of the World," La Maison Bleue serves exceptional traditional cuisine in a setting that is indeed romantic and worth the splurge. Mehdi el Abbadi converted his family's early-20th-century home into Fes's first maison d'hôte, and sister Kenza turned the kitchen and ground floor into one of the city's premier gourmet experiences. Aperitifs and olives are served in the marble-floor courtyard, while Andalusian or Gnaoua musicians play softly in the background; a zellij fountain provides a sound of tranquillity. Candle-lit tables are spread throughout three intimate salons. The four-course set menu changes with the seasons, but can include a meze of Moroccan salads, chicken or pigeon pastilla, and a delightful dessert of sliced orange in cinnamon. The ambience is matched by the service, which is attentive and discreet. Vegetarians should let their preferences be known at the start of the meal.
