Named after its owner/founder, this attractive restaurant is one of Europe's most consistently respected purveyors of traditional Basque cuisine. Contained in what was a 1920s villa, it's on the southern outskirts of town, near the local parador and the city limits of Irún. Menu specialties include a terrine of green vegetables and fish served with red-pepper vinaigrette, baked sea crabs with tiny potatoes and onions, and fresh pasta with seafood. The dessert specialty is a mandarin-orange tart flavored with rose petals. The villa is surrounded by a pleasantly unstructured garden you can appreciate from a table on the terrace.
