Some of the best seafood on Grand Cayman can be found 3km (2 miles) north of George Town at the premier restaurant of the Hyatt Regency. Hemingway's occupies a rambling, single-story annex shoehorned between the beach and a pair of swimming pools. There's a rather plush bar (an after-work hangout favored by managers of competing, nonaffiliated restaurants nearby), an air-conditioned dining room with big windows, and a shaded colonnade set for outdoor dining with spinning fans overhead and trails of bougainvillea nearby. The menu is among the most imaginative on the island and has won acclaim from Gourmet magazine. Appetizers include a tasty coconut shrimp with a mango marmalade accent, Cuban-style barbecued turtle steak, and well-spiced crab cakes. For the main event, choices range from paella to an absolutely fantastic deep-fried version of a whole deboned red snapper artfully presented like a sculpture with pickled onions, bell peppers, and garlic-laced mashed potatoes. Other choices include Boursin-infused New Zealand lamb with couscous and caramelized onions or blackened and citrus-and-cumin-marinated tenderloin of pork. There's also the catch of the day, prepared any way you want it.
