Named for a character in James Michener's Centennial, this casually elegant restaurant follows the novel's theme in its Western decor and is a solid if not spectacular choice. Our choice here is the excellent slow-roasted prime rib, and you won't go wrong with the daily fresh fish selection. The menu also features filet mignon, chicken, Colorado lamb and roast duck, plus pastas, such as pasta primavera, which is available with chicken or shrimp and in a marinara or Alfredo sauce.
