Key ingredients are imported, the fish is very fresh, and the presentation is unrivaled. This is the place where Saigon's many Japanese expatriates come to celebrate, and on weekend nights the place is packed. Mr. Itano serves all kinds of Japanese cuisine, along with his famous sushi, from udon noodles to Ochazuke, a dish of special herbs and spices over rice soaked in hot tea.
