Booderee National Park, at Jervis Bay, is nothing short of spectacular. How does this grab you: miles of deserted beaches, the whitest sand imaginable, kangaroos you can stroke, lorikeets that mob you for food during the day and possums that do the same at night, pods of dolphins, great walks through gorgeous bushland, and a real Aboriginal spirituality of place? Most marsupials come out in the evening, and you'll only get the best from the place if you bring your walking shoes and spend a couple of days. A car will get you from beach to beach and to various walking tracks.
