Don't you love these places that use fresh local ingredients, make everything to order, and barely charge anything for all that trouble? A tiny sidewalk cafe with brisk takeout and a handful of tables on Kapaa's main drag, Mermaids takes kaffir lime, lemon grass, local lemons (Meyers when available), and organic herbs, when possible, to make the sauces and beverages to go with its toothsome dishes. Sauces are lively and healthful, such as the peanut satay made with lemon juice instead of fish sauce. It's served in the tofu or chicken satay, chicken coconut curry plate, and chicken satay wrap. The seared ahi wrap is made with the chef's special blend of garlic, jalapeño, lemon grass, kaffir lime, basil, and cilantro, then wrapped in a spinach tortilla -- fabulous. The fresh-squeezed lemonade is made daily, and you can choose white or organic brown rice. These special touches elevate the simple classics to dreamy taste sensations.
