There's no more wonderful cuisine on the Western Riviera than L'Oasis. At the entrance to the harbor of La Napoule, in a mid-20th-century house with a lovely garden and a re-creation of a medieval cloister, this restaurant became world famous under now-retired Louis Outhier. Today, his protégé, Stéphane Raimbault, prepares sophisticated cuisine. Because Raimbault cooked in Japan for 9 years, many of his dishes are of the "East meets West" variety. The cuisine falls roughly into traditional French or traditional Provençal, with a touch of Japanese. The latter cuisine is evoked by crayfish cooked "in the fires of hell" and served with wok-fried baby vegetables. Traditional dishes include perfectly grilled Mediterranean fish or a masterful saddle of venison with hazelnuts, pepper sauce, and caramelized pears. The cellar houses one of the finest collections of Provençal wines anywhere. In summer, meals are served under the plane trees in the garden.
