The owners leave no doubt where their priorities lie. While the hotel is entirely satisfactory, the restaurant is their beloved baby, and it has the glowing reviews to prove its prowess (the star up there is for the dining). False modesty isn't a factor -- l'eau à la bouche means "mouthwatering" -- and the kitchen mostly delivers. Native ingredients and ample portions are meshed with nouvelle presentations, and the menu changes often. Full advantage is taken of seasonal products, as with one summer starter of a poached half-lobster with chanterelles and gathered wild vegetables. Game dishes arrive in fall. Desserts are impressive, but the cheese plate -- pungent nubbins delivered with warm baguette slices -- is truly special. There are two meal options, and both are pricey: the C$150 (US$130/£65) Discovery Menu, and the C$67 (US$58/£29) table d'hôte, with extra charges for potatoes (C$6/US$5.20/£2.60) and vegetables (C$10/US$8.70/£4.30).
Bedrooms in the hotel have reproductions of Québec country furniture, and six have fireplaces and balconies or patios. A spa with massage rooms and a pretty outdoor hot tub and small waterfall is new. Chef and owner Anne Desjardins has also added a package that includes 2 days working alongside her in the kitchen.
