Said wines run the gamut of virtually every vintage produced within Germany, and the staff is well versed in their compatibility with menu items that include fresh or marinated salmon, all kinds of venison (available year-round), a savory version of rump steak, and perfectly grilled fish. Expect lots of emphasis on whatever vegetable is in season at the moment of your arrival. In spring, for example, asparagus is celebrated with at least a dozen variations served either as starters or as main courses. No one will object if you order just wine and a small platter of food; examples include Spundekäse, an age-old recipe that mingles local cheese whipped with onions and cream into a soft paste.
