Chef Ed Santos is serving up some incomparable fare at this central Maui hot spot. The industrial motif features table bases made from hubcaps, a garage-door divider for private parties, blown-glass chandeliers, and gleaming chrome and cobalt walls with orange accents. The menu is brilliantly conceived and executed. Fried green tomatoes are done just right and served with slivered red onions. Three different kinds of ceviche perfectly balance flavors and textures: lime, cilantro, chile, coconut, and fresh fish. There's even barbecued ribs.
