Frommer's Review
A sophisticated international restaurant with French overtones, using regional ingredients, Bistro M created the first open kitchen in South America. Busy chefs attend to the wood-burning oven while crisp waiters attend to you; the most interesting dishes include marinated goat with chimichurri (chile and garlic sauce), grilled trout with artichokes and tomato slices, and veal spareribs. The classic Argentine filet mignon served with a drizzle of Malbec reduction is exquisite. Appetizers and salads are elegant and fresh. A spiral staircase climbs past a two-floor wine gallery housing over 450 selected regional wines, some of which are available by the glass. The sommelier will help guide you toward a selection, but don't be surprised if you're steered toward a Malbec. Bistro M has large windows looking out to Plaza Independencia, and an outdoor terrace open in warm weather. After dinner, you can retire to the wine bar upstairs.
