One of the premier culinary mega-stars of France, Monsieur Robuchon now tickles the palate of the gastronomically jaded clientele of southern France from within this conservatively contemporary dining room in the landmark Hotel Metropole. The dining room is decorated in a color scheme of subtle green and brown, with a view that sweeps out over the nearby sea. It seats only 60 diners at a time.
The menu changes with the inspiration of Robuchon and his on-site culinary deputy, executive chef Christophe Cussac, but dishes likely to remain long-term include grilled filets of John Dory seasoned with "perfumes of the Mediterranean," some of the best lamb chops in France (from the Sisteron region) served with a creamy and buttery version of mashed potatoes; caramelized quail with mashed potatoes and truffles sauce; and crayfish served with crisp-cooked pasta and basil sauce. If you're in the mood for dessert, the "chocolate temptation" is an alluring choice.
Note that if you're cutting costs, it's wise to opt for lunch here rather than dinner, selecting the below-noted set-price lunch, which includes two glasses of wine per person as part of the all-inclusive price.
