Executive Chef Eugene Gomes, who left the Sheraton Fiji to open the dining complexes at Jack's Handicrafts here, shows off his culinary skill here at Fiji's top restaurant. Given the favorable exchange rate of the U.S. dollar against its Fijian counterpart, dining here is a good bargain -- and you get another 10% discount if you purchase F$100 (US$60) worth of merchandise from Jack's (bring your receipt). The service is extraordinarily attentive, and the cuisine is very well presented. Menus vary with the season. The stars are wonderful pan-fried pakapaka (snapper) under a sweet brown apple sauce or king prawns perfectly chargrilled and served with a salad of Boston lettuce and a slightly Roqueforty dressing. There's also grilled beef tenderloin and rack of lamb to satisfy Australian and New Zealand patrons.
