Indigo ReviewThis excellent restaurant with mostly outdoor tables is the latest creation of executive chef Eugene Gomes, who left the Sheraton Fiji to open the dining outlets at Jack's of Fiji in Nadi Town . Along with his Saffron restaurant, Indigo serves the country's best and most authentic Indian cuisine. The top (and most expensive) offering is mangrove crab masala, but I prefer the Goan pork curry (an import from Eugene's home of Goa, a former Portuguese and predominately Catholic colony). The butter chicken is excellent, too. The Asian side of the menu features Thai-style crab and Rendang curry. Vegetarians can choose from among at least eight dishes.
