Biking the Niagara River -- There's an excellent paved path that runs the length of the Niagara River from Niagara Falls all the way up to picturesque Niagara-on-the-Lake, a historic 19th-century village known for its charm and its wines. Part of the Niagara River Recreation Trail, it's a beautiful ride through scenic countryside. (You can also continue south on the trail, all the way down to Fort Erie; the entire trail is 35 miles long.)
