Chef/owner Gilbert Henry had long established himself as one of the top toques in Portland before moving recently to the small town of Carlton in the heart of the wine country. Here Henry's classic French cuisine is the perfect foil for fine wines from Carlton-area wineries. The boeuf bourguignon is the perfect dish to go with a local pinot, but there's also usually a lamb dish (perhaps cassoulet or lamb chops) on the menu. Be sure to start your meal with some oysters or sautéed mushrooms and local pinot gris or chardonnay. Attached to the restaurant is a cute little shop--Lulu (tel. 503/852-6777)--that sells hand-picked imports from France.
