The menu merges island cooking styles and ingredients, as in their signature sautéed opakapaka (pink snapper) crusted with macadamia nuts and cilantro with ginger-scented jasmine rice and a kaffir lime sauce; the wonderful seafood duo (tempura ahi with orange miso-glazed Kona kampachi) with Molokai sweet potatoes and Big Island hearts of palm salad; or the popular Bali trio, which combines the signature opakapaka with grilled filet mignon and lemongrass prawns in a spicy mango coulis. The menu also features "heart healthy" items like the angel hair pasta with vine-ripened Hawaii tomatoes, Big Island mushrooms, and island-grown asparagus in a basil tomato sauce.
