On our latest tour of Palermo dining rooms, La Scuderia surfaced at the top of our list. Dedicated professionals run this restaurant surrounded by trees at the foot of Monte Pellegrino, 5km (3 miles) north of the city center near the stadium at La Davorita. The talented chefs change the menu according to what looks good at the market; the ingredients, as always, are of top quality. The imaginative cuisine includes a mixed grill of fresh vegetables with a healthy dose of a Sicilian cheese called caciocavallo involtini (roulade) of eggplant or veal; risotto with seafood; and strettini (homemade pasta) sautéed with mussels, tuna roe, fresh thyme, and lemon. A curiosity and a worthy dish as well is the filet of tuna with melon (yes, melon), mint, and toasted pine nuts. Everything is beautifully presented and served with typical Sicilian courtesy. In summer, the restaurant has one of the prettiest terraces in town, with tables sought after by lovers, families, and vacationing glamour queens alike.
