Panama City's top Mexican restaurant seems more Mexican than Mexico itself. The owners, the Uribe family from Guadalajara, have draped the colorful walls and festooned every nook and cranny with gads of Mexican folk art, historic photos of Mexico, and hand-painted crockery, and fitted the dining area with traditional leather furniture. The food here is authentic Mexican more than Tex-Mex. Don't miss the spicy chicken mole poblano, the "divorced" enchiladas (a red and green enchilada with gooey cheese separated down the middle by a couple of chips), or the puerco pibil (a citrus pork dish from Mérida). Wash it down with one of the good, frosty margaritas.
