Frommer's Review
It's so old, it's new again. This elegant restaurant was a bistro before World War II and has since become a legend. The main salon stretches two stories high, with a mezzanine on each side. Tall, silk-draped, arched windows frame the tables set with fine porcelain, gold-edged crystal glasses, and silver candelabras. The ceiling is painted with white clouds and a cerulean sky, but in good weather, the staff slides back the roof to reveal the real sky. The faces of Audrey Hepburn, Maria Callas, and Marlene Dietrich have given way to young British royals and statuesque models from Brazil. A spectacular chef, Jean-Louis Nomicos, is a master of taste and texture, and he's brought renewed life to this swank citadel. The appetizers are among Paris's finest, including truffle salad, grilled foie gras of duckling served with a confit of green apples, Chablis-flavored Belon oysters, and a hyper-upscale version of macaroni with foie gras and truffles. The signature main course is poached sole filets Club de la Casserole, in puff pastry with asparagus tips and asparagus-flavored cream sauce; also wonderful are the veal kidneys flambé and pigeon André Malraux. For dessert, and evocative of the new menu, the chef serves roasted baby pineapples in passion-fruit juice with coconut sorbet. The wine cellar, with some 160,000 bottles, is one of Paris's most remarkable.
