Flanking the verdant courtyard of a small hotel, this much-talked-about restaurant serves the best Italian food in Paris. The cuisine is fresh, inventive, and seasonal. Dishes are from throughout Italy, with emphasis on the North. Look for such items as farfalle pasta with squid ink and fresh shellfish, and award-winning guinea fowl (spit-roasted and served with artfully shaped slices of the bird's gizzard, heart, and liver) with polenta. The service is flawless: The French and Italian-speaking staff is diplomatic and good humored. If you want to see what's cooking, ask for a seat in the dining room with a view of the rotisserie, where hens and guinea fowl slowly spin. In warm weather, tables fill an enclosed patio.
