A series of brick-vaulted rooms descends under a medieval palazzo past an open kitchen from which emerge billows of steam and the slightly adventurous creations of the cooking staff: The capriolo frutti di bosco (goat served with wild berries) is just one example. Start with the light and delicious ravioli all'arancia e petali di rosa (cheese ravioli in cream sauce flavored with mandarin orange slices and rose petals) or agnolotti alla Norcina (a typical Umbrian dish of small meat ravioli under a sauce of cream, sausage, and black truffle). The arrosto misto is a particularly good grab bag of roast rabbit, guinea hen, lamb, and other meats, while the lombetto incrostato (encrusted filet of pork with a sauce of walnuts, mushrooms, and truffles) is a hearty yet refined option for hungry gourmands.
