You'd never guess that this unpretentious hole-in the-wall with seating for only 28 people is home to chef Nobuo Fukuda, considered one of the best chefs in the country. The menu lists barely more than a dozen dishes, so it's almost impossible to go wrong here. Not one of these dishes can really be considered sushi, so don't expect items such as California rolls. Instead, consider the seared tuna tataki or warm white-fish carpaccio. For the full treatment from Nobuo, order the multicourse omakase dinner. The restaurant is affiliated with the adjacent Cowboy Ciao and has an overwhelmingly long wine list that includes lots of premium sakes. By press time, Sea Saw will have moved to its new location at Scottsdale's South Waterfront (call for address), and this space will be home to pastry chef Tracey Dempsey's French tea room.
