Though born in Puerto Rico, chef/owner Thierry Blouet, has come to exemplify all things French in Puerto Vallarta, and to be fair, he was raised and trained in France (he holds the honor of being both a French Academie Culinaire and a Maitre Cuisinier de France). His menu relies heavily on the French classics, with some Mexican touches, and he presents each dish as if it were a painting on the plate, pleasing the eye as well as the palate. So the confit of suckling pig comes in a taco with colorful swirls of sauce adorning the place, and the escargots are a spicy treat served in ravioli with poblano peppers. All is served in a setting that couldn't be more romantic, with magnificent hilltop views, a dining room bedecked with hundreds of tear-drop shaped crystals hanging from the ceiling and flowers galore.
