This zesty restaurant adjoins Hôtel Le Priori and occupies the space where Laurie Raphaël started before it went on to become the city's gastronomic flag bearer. There must be good karma, because Toast! has all the signs of following the same trajectory. As is true of most important restaurants in the province, the kitchen has its base in the French idiom, but takes off in many directions. See that in a pecan-crusted rack of rabbit with a cold purée of potato, cream, and horseradish, perked with a basil foam and Parmesan. Or fennel soup followed by chopped tuna, spiced with ginger and lemon zest, shaped into a burger and then grilled -- but on just one side. Every dish is like that: audacious, sprightly, and attentive to joined tastes and textures. The interior room has a crimson glow from a wall of fire-engine-red tiles, retro-modern lights, and red Plexiglas paneling in the windows. Try for the outdoor dining terrace out back, if it's warm enough: With wrought-iron furniture and big leafy trees overhead, it's an oasis.
